First of many recipes as well.... Turnip and Cheese Soup

Many of you have seen the pictures of the soup on Facebook, but this way, the recipe can be used for the ages. Please be reminded that you can tinker with the recipe, I know I had to from the lady at the Autism Society. :)




Turnip and Cheese Soup
Ingredients:
1 large and 1 medium turnip (peeled and diced)
1 large onion
2 tablespoons of butter
4 Cups of vegetable broth or chicken
2 cloves of garlic
1 teaspoon of salt (to taste)
1 teaspoon of pepper (to taste)

Description:
·         Melt butter, then add onions, garlic and saute.
·         Add the 4 cups of broth
·         Add diced turnip and boil until tender.
·         Once the turnip softens (you may have to add a cup or two of water depending on consistency of the boiling, I had to add 2 cups the first time I made it) place in food processor and puree.
·         You may add another cup of broth or water depending on the desired thickness of the soup, it should be creamy.
·         The salt/pepper can be added now for tasting purposes, more pepper means more zing.
·         When serving, put in a soup bowl with a topping of shredded chedder to the middle. 


So that's all it is... There was a lot of working with it at first but it's pretty good I must say so. 

Especially if you like turnip at all. :)
