Turnip and
Cheese Soup
Ingredients:
1 large and 1 medium turnip (peeled and diced)
1 large onion
2 tablespoons of butter
4 Cups of vegetable broth or chicken
2 cloves of garlic
1 teaspoon of salt (to taste)
1 teaspoon of pepper (to taste)
Description:

Melt butter, then add onions, garlic and saute.

Add the 4 cups of broth

Add diced turnip and boil until tender.
·
Once the turnip softens (you may have to add a
cup or two of water depending on consistency of the boiling, I had to add 2
cups the first time I made it) place in food processor and puree.

You may add another cup of broth or water
depending on the desired thickness of the soup, it should be creamy.
·
The salt/pepper can be added now for tasting
purposes, more pepper means more zing.
·
When serving, put in a soup bowl with a topping
of shredded chedder to the middle.
So that's all it is... There was a lot of working with it at first but
it's pretty good I must say so.
Especially if you like turnip at all. :)
